Description
A whole bone-in lamb shoulder, sourced from trusted farms here in Staffordshire. Full of flavour and ideal for slow roasting, the shoulder is naturally well-marbled, ensuring tender meat that pulls easily from the bone once cooked.
With the bone left in for superior flavour and succulence, this makes a superb centrepiece for a comforting roast.

Cooking Guide
Remove from the fridge 30–40 minutes before cooking
Preheat oven to 180°C (160°C fan)
Score and season the surface generously with salt, pepper, and rosemary or garlic if desired
Place in a roasting tray with a little stock or water
Roast for 45 minutes per 500g for a traditional carveable roast
Or cook low and slow at 150°C (130°C fan) for 4–5 hours until the meat is tender and falling from the bone
Rest for at least 20 minutes before carving or pulling
Serving Suggestion
Serve with roast potatoes, seasonal vegetables, and a rich lamb gravy, or cook low and slow and pair with mint sauce for a traditional finish.
