Description
A half lamb shoulder prepared from locally sourced Staffordshire lamb. Smaller and more manageable than a whole shoulder, this joint is perfect for a smaller roast or slow-cook meal for 2–3 people. Naturally well-marbled for tenderness and flavour, shoulder is ideal for long, gentle roasting.

Cooking Guide
Remove from the fridge 30–40 minutes before cooking
Preheat oven to 180°C (160°C fan)
Season generously with sea salt, black pepper, and fresh herbs if desired
Roast for 45 minutes per 500g for a traditional carveable roast
Or cook low and slow at 150°C (130°C fan) for 3–4 hours until the meat is soft and pulls easily from the bone
Rest for at least 15–20 minutes before carving
Serving Suggestion
Serve with roast potatoes, seasonal vegetables and a rich gravy, or shred and pair with mint sauce for a more rustic finish.
