A roast sirloin is really rather hard to beat; pan sear it to seal in the juices, cook in a hot oven, then importantly let it rest. Best served pink in the middle.
We tie string around our sirloin roasts to provide a pleasing shape, but not so tightly as to squeeze out the juices.
