Jerk Pork Chops

We all know that pork chops make a great British meal, but at times we like to spice it up and go Caribbean with this awesome quick recipe.

Ingredients (Serves 4)

Jerk Chops: Pork chops, 1 tbsp. allspice, 1 tsp. ground cinnamon, 1 tsp. ground coriander, 1 tsp. chilli flakes, small bunch of thyme, 1/2 tsp. ground ginger, 1 tbsp. balsamic vinegar, 2 tsp. soy sauce, 3 cloves garlic, sunflower oil

Dressing: 3 tbsp. olive oil, 1 tbsp. balsamic vinegar, 1cm piece fresh ginger finely chopped, zest & juice of 1/2 an orange, 2 tsp. sugar, salt pepper

Put the allspice, cinnamon, coriander, thyme leaves, chilli flakes, nutmeg, ginger, salt and pepper in a dish suitable for marinating the chops.  Add 1 tbsp. of the sunflower oil, the balsamic vinegar, the soy sauce, and blend all ingredients well together, then add the pork chops and cover them thoroughly with the sauce.

Place a griddle pan on the hob until it is nice and hot,  light your BBQ and wait until the embers are burning hot, or put your frying pan on the heat and add 1tbsp. of sunflower oil.

Put your chops on the heat, and cook on a medium heat for around 7 minutes each side, or until the chops are just cooked through.

Whilst the chops are cooking you’ll have time to put your dressing together.  Simply mix, check the seasoning and adjust to suit your taste

Serve your chops on a bed of couscous or quinoa, and a crispy salad.  Put the dressing on the table and guests can help themselves
