This joint is really the gem of all pork joints; perfect for roasting with a great fat covering, but also ideal for pulled pork. If cooking pulled pork, we recommend that you remove the fat and rind, season well with sea salt and cook this in the oven to make the most incredible crackling/pork scratchings.
